Super simple, buttery-garlicky sauce lets the fresh shrimp star. Ready in 25 minutes.

  • 1½ Tbsp olive oil
  • 1 lb fresh shrimp, peeled and deveined
  • Salt to taste
  • 6 cloves garlic, finely minced
  • ¼ tsp red pepper flakes
  • 3 Tbsp lemon juice
  • 1 Tbsp caper brine (or sub white wine/olive juice)
  • 2 Tbsp cold butter, cut into 4 pieces
  • ⅓ cup chopped flat-leaf parsley, divided

Instructions

  1. Heat oil in a heavy skillet over high heat until smoking. Add shrimp in a single layer; cook 1 minute without stirring.
  2. Season with salt, stir until shrimp start turning pink (~1 min).
  3. Add garlic and red pepper flakes; cook 1 minute.
  4. Stir in lemon juice, caper brine, 1 piece butter, and half the parsley. Cook until butter melts (~1 min).
  5. Reduce heat to low, add remaining butter. Stir until sauce thickens and shrimp are opaque (2–3 min). Remove shrimp, thin sauce with 1 tsp water if needed, then pour over shrimp and top with remaining parsley.

Serve with: Rice, pasta, or crusty bread.
